Beach Week Kick Off

Did you know that this week is ..BEACH Week?!

The girls at Tone It Up are hosting Beach Week, which is a full week geared toward keeping the summer heat alive with workout challenges, clean eating, support from the girls and the community, and giveaways! In recognition of Beach of Week, I completed a bunch of workouts today! I started the day off with a 3 mile run. I was very surprised at my pace! According to Map My Run, I ran at an average of a 9:50 min/mile pace. Perhaps my training is paying off! In the morning, I also completed Tone It Up’s Sea Shell Workout before heading out the door to complete some last minute school preparation!

When I came back from shopping, I was ravenous! Since I just went on a grocery haul earlier in the day, I fixed myself a huge salad of spinach, dried cranberries, feta, sliced almonds, and quinoa. 


I topped off the salad with a squeeze of fresh lemon and a drizzle of balsamic vinegar. This salad hit the spot! The addition of quinoa served as a source of protein which kept me full and satisfied for a few hours.


In following along with the Beach Week “rules” I made tonight’s dinner “Lean, Clean and Green.” The girls at Tone it Up use this term a lot to describe meals that are made with lean protein, clean ingredients, and green veggies. I decided to look for inspiration in the cookbook binder my mom gave to me before I left for school. I ended up using the Orange Baked Salmon recipe which was amazing!! The recipe called for 4 simple ingredients, and was super easy to make. I paired my salmon with a stack of  sautéed asparagus. Yummy 🙂

Well, it’s time to relax and enjoy my final night of summer vacation! Tomorrow, graduate school begins, marking my first step in pursuing my career as a speech-language pathologist! Wish me luck!
